Okay! So I've been seeing pictures for Mexican stuffed shells for the last couple years ! Between me having a picky husband, and then just being plan lazy up till now in the cooking department I've never tried it! So I was looking on Pinterest while Callie was napping and I came across a recipe for this that didn't require cream cheese, or salsa 2 things of which my husband wouldn't eat. Instead this recipe calls for
1lb ground beef (or turkey if you prefer)
2 cans enchilada sauce
1 large can of refried beans
1 package jumbo shells
2 - 8oz blocks of Colby jack and pepper jack (1 of each :) )
Lightly coat the bottom of your dish with some enchilada sauce
Mix up the cooked ground beef and refried beans I recommend cooking them as well I didn't and I should have, and 3/4 of your cheese, then scoop the mixture into your cooked and cooled jumbo shells.
Put in the oven on 350 degrees and bake until it bubbles :)
The. Well-lah! Mexican shells :) for the picky eater !
I don't have pictures of the finished product and on a 5 star rating 5 being excellent 1 being crappy I'd give it a 3 it wasn't as great as it looks !
